Cake Batter Protein Bites
These no-bake cake batter protein bites are super fun and best of all they taste just like birthday cake but are gluten-free and high in protein!
- 1/2 cup oats
- 6 tbsp almond flour
- 1/2 cup shredded coconut
- 1/4 cup vanilla protein
- 2 scoops collagen peptides
- 1/2 cup cashew butter
- 1/4 cup honey
- 1/2 tsp salt
- 1/3 tsp vanilla extract
- 1/4 tsp almond extract
- rainbow sprinkles
Add oats, almond flour, coconut flakes, protein, collagen peptides, and salt to a food processor and pulse till a smooth fine flour
Add in cashew butter, honey, and extracts and pulse until it forms a dough
Add in sprinkles and stir by hand (or make balls then roll into sprinkles)
Roll or scoop into bites and let set in the freezer to set for 15 minutes to an hour
Store in the fridge or freezer in an airtight container
