Chickpea Brownie Batter Protein Bites

Chickpea brownie batter protein bites are rich, smooth, and ultra-chocolatey made with simple wholesome ingredients.

Ingredients
  

Brownie protein bites

  • 1 can chickpeas (drained and rinsed)
  • 1/2 cup chocolate protein powder
  • 1/4 cup cacao powder
  • 1/3 cup almond butter
  • 1/2 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp salt

Chocolate coating

  • 1 cup chocolate chips
  • 1 tbsp melted coconut oil
  • flakey sea salt (optional for topping)

Instructions
 

  • Drain and rinse a can of chickpeas
  • Add chickpeas, chocolate protein, cacao powder, almond butter, maple syrup, vanilla extract, and salt to a food processor
  • Process the mixture until it forms a smooth dough and all ingredients are well incorporated
  • Scoop the batter with a cookie dough scoop and roll it into balls then place on a baking sheet lined with parchment paper
  • Place the baking sheet in the freezer and let the dough harden for about 30 minutes
  • Melt chocolate chips with coconut oil
  • Once the brownie balls have hardened dip each ball into the chocolate and place back on the backing sheet sprinkling with sea salt if you like
  • Once all brownie bites have been dipped in chocolate place them back in the freezer to let the chocolate harden
  • Store in the fridge or the freezer (if you store them in the freeze let them thaw for 5 or so minutes before eating) and enjoy!
