Cucumber & Mango Summer Salad
This bright cucumber and mango salad is an amazing summer dish. It is loaded with edamame to make it protein-packed and filling. This salad comes together easily for meal prep, a BBQ, or a quick meal.

2 cups cucumber 2 mangos 1 bell pepper red, orange, or yellow 1/2 red onion 1 jalapeno 1/4 cup cilantro 2 limes 2 tbsp olive oil 2 tbsp apple cider vinegar salt to taste
Peel cucumber and mangos
Chop cucumbers, mangos, and bell pepper into small pieces
Finely dice red onion and japaelo
Chop cilantro
Cook edamame as directed on the package (I buy a frozen bag of shelled edamame, skip if yours is not frozen)
In a large bowl combine cucumbers, mangos, bell pepper, red onion, jalapeno, edamame, and cilantro
Add the juice of two limes, apple cider vinegar, and olive oil
Mix to combine and add salt to your taste
Serve immeidatly or store in the fridge for up to 4-5 days
