Lemon Berry Chia Protein Pudding
Lemon berry chia seed protein pudding is bursting with fresh lemon flavor and sweet blueberries for an easy-to-meal prep breakfast or snack.

Chia Pudding
- 1/2 cup chia seeds
- 2 scoops vanilla protein
- 2 cups plant-based milk
- 1 lemon (juice and zest)
- fresh or frozen blueberries
Optional Toppings
- shredded coconut
- nuts or nut butter
- fruit
- coconut yogurt
In a bowl add chia seeds, protein, milk, lemon juice, and lemon zest
Whisk together and let thicken in the fridge for at least one hour
Once chia seed pudding has thickened layer with fresh or frozen blueberries and any topping you enjoy
Store chia pudding in an air-tight container for up to 5 days
