No-Bake Vegan Fudge Brownies

These are the ultimate raw vegan fudge brownies are no-bake, chewy, decadent, and even topped with a thick chocolate ganache but made with good for you ingredients!

Ingredients
  

Brownie Layer:

  • 9 medjool dates
  • 1 cup walnuts
  • 1/4 cup cacao powder
  • 1/2 tsp salt
  • 1/2 tsp vanilla extract

Frosting Layer:

  • 2 avocados
  • 1/4 cup maple syrup or honey
  • 1/4 cup cacao powder
  • 1/2 tps vanilla extract
  • 1/2 tsp salt

Optional add ins:

  • 2 scoops unflavored or chocolate collagen (or 1 scoop chocolate protein) to the frosting for extra protein
  • 1/4 cup peanut flour for peanut butter flavor to the frosting

Instructions
 

  • Remove pits from dates (if needed soak dates in hot water for a few minutes to soften)
  • Add walnuts, dates, cacao powder, vanilla, and salt to a food processor. Pulse to combine till soft and crumbly. The brownie dough will resemble potting soil. 
  • Line a 9x 5 bread pan with parchment paper and press the brownie mixture firmly into an even layer. If you don’t have a bread pan you can use any glass or plastic container available up to 8×8, depending on how thick you want your brownies to be.
  • Combine large avocado, cacao powder, honey or maple syrup, vanilla, and salt in the food processor until smooth and creamy.
  • Optional-add collagen, protein, or/and peanut flour to frosting and mix.
  • Swirl a thick layer of frosting on the brownie layer and r freezer for 1 hour until firm.
  • Slice into 10-14 brownies and store in the freezer
