Peach Almond Crumble

An easy summer dessert recipe filled with juicy peaches and a paleo almond crumble topping. Peach almond crumble is a healthy vegan and gluten-free treat!

Ingredients
  

  • 6 ripe peaches (peeled and sliced)
  • 2 tbsp coconut oil
  • 1 1/2 cups almond flour
  • 1/4 cup almond butter
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 2 tsp cinnamon
  • 1/2 tsp salt

Instructions
 

  • Preheat oven to 350
  • Slice peaches (you can peel them or not-your choice)
  • Melt coconut oil, pour over sliced peaches, and mix to coat
  • Spray a baking dish or individual ramekins with cooking spray and spread peach mixture evenly in the baking dish or individual ramekins
  • Combine almond flour, almond butter, maple syrup , cinnamon, vanilla, and salt in a small bowl until the mixture becomes crumbly. Add more almond flour if too wet and more almond butter or maple syrup if too dry
  • Sprinkle the crumble mixture evenly over top of the peaches
  • Cover dish with foil and bake for 18 minutes
  • Uncover and bake for an additional 5-7 minutes or until the crumble becomes golden brown
  • Top with vanilla ice cream and enjoy
