Flourless Vegan Banana Muffins

Flourless vegan banana muffins made with simple ingredients that make for a great breakfast or snack, best of all you can make these in the blender!

Ingredients
  

  • 2 cups rolled oats
  • 4 scoops collagen peptides optional but adds protein
  • 2 tbsp ground flaxseed
  • 1 tsp cinnamon
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 medium spotty bananas the spottier the better
  • 1/4 cup nut butter
  • 1/4 cup maple syrup
  • 1/2 cup plant-based milk
  • 1 tsp vanilla
  • 1/2 tbsp apple cider vinegar optional but makes them rise more and get fluffier

optional mix ins

  • chopped nuts
  • mini chocolate chips
  • blueberries

Instructions
 

  • Add wet ingredients to a high-speed blender. Blend bananas, nut butter, maple syrup or honey, milk, apple cider vinegar, and vanilla to combine
  • Add oats, collagen peptides, flaxseed, cinnamon, baking soda, baking powder, and salt to a blender and blend to form muffin batter
  • You can hand stir in optional add-ins now or wait and add them to the individual muffin cup at the end. I like to add them to the individual muffin cups at the end so to keep them evenly distributed 
  • Fill greased muffin tins 3/4 full with muffin batter
  • Bake at 350 for 20-22 minutes till muffins are golden brown
  • Let cool then remove from muffin tin
