Maple Almond Apple Crumble

This simple, vegan, grain-free and gluten-free paleo maple apple crumble is a fall favorite that is easily whipped up for a healthy treat.

Ingredients
  

  • 5 apples
  • 2 tbsp coconut oil
  • 1 1/2 cup almond flour
  • 1/4 cup almond butter
  • 1/4 cup maple syrup
  • 2 tsp cinnamon divided
  • 1/2 tsp salt
  • 1/2 tsp vanilla extract

Instructions
 

  • Preheat oven to 350°.
  • Dice apples (you can peel them or not—your choice).
  • Melt coconut oil and pour over apples.
  • Add 1 cinnamon and mix to coat apples.
  • Spray a small baking dish, or individual ramekins, with cooking spray and spread the apple mixture evenly in the baking dish or dishes.
  • Combine almond flour, almond butter, maple syrup, 1 tsp cinnamon, vanilla, and salt in a small bowl until the mixture becomes crumbly. Add more almond flour if too wet and more almond butter or maple syrup if too dry.
  • Sprinkle evenly over the top of the apples.
  • Cover dish with foil and bake for 25 minutes.
  • Remove the foil and continue to bake for 10-15 minutes until golden brown
