Hawaiian Chicken Bowl

These Hawaiian chicken bowls are the perfect healthy meal, full of veggies, flavor, and protein. If you are looking for an easy meal or meal prep recipe I highly recommend trying these bowls!

Ingredients
  

  • 1 bag arugula
  • 1 cup brown rice
  • 1 can black beans
  • 2 cups roasted butternut squash or sweet potatoes
  • 1 lb chicken breast or boneless chickent thighs
  • 1 cup BBQ sauce
  • 1 cup pineapple salsa or make my pineapple cucumber salsa
  • 2 avocados

Instructions
 

  • Cook rice as instructed on the package
  • Chop and roast sweet potoates or butternut squash
  • Grill, bake or make shredded BBQ chicken
  • Drain and rinse one can of black beans
  • Slice avocados
  • Add greens, rice, black beans, roasted sweet potatoes or butternut, and bbq chicken to a bowl. Top with salsa, avocado, and more BBQ sauce on the chicken, and enjoy!
