Mango Matcha Chia Pudding
Mango matcha chia pudding is a great meal prep for a healthy breakfast or snack. It is made with simple ingredients and is high-protein for a blood sugar-balancing meal.

3 tbsp chia seeds 1 scoop vanilla protein 1 cup plant-based milk 1 tsp matcha powder 1/2 cup sliced mango granola (optional)
In a bowl add chia seeds, vanilla protein, and matcha and stir
Pour in milk and whisk together and let thicken in the fridge for a minimum of 15 minutes
Stir again to mix to break up any clumps before serving
Once chia seed pudding has thickened in jars or containers layer with toppings of choice
Store chia pudding in an airtight container or jar for up to 5 days
