Healthy Lasagna Soup
This healthy lasagna soup is a favorite of mine You get all the flavors of lasagna but in an easy-to-make soup that is gluten-free, high-protein, and topped with melty cheese.

1 chopped sweet onion 3-5 cloves minced garlic 1 pack chicken sasuage chopped into bite-size pieces 2 cans fire-roasted tomatoes 2 cups chicken broth or bone broth 2 tbsp Italian seasoning 1 box gluten-free pasta (I use chickpea pasta) shredded mozzarella for topping (dairy-free if needed)
Heat one tablespoon of olive oil in a large pan over medium heat
Add chopped onion and minced garlic and cook till soft and translucent
Add your chopped chicken sausage to the large pan and stir occasionally until browned
Meanwhile, prepare noodles according to the directions listed on the package
Once your sausage is cooked mix in two cans of diced tomatoes, broth, and spices
Cover and let the soup simmer
Once pasta is finished cooking drain and then stir into soup
Serve with mozzarella cheese on top
