acorn squash
roasted
1/2
scoop
vanilla protein
1
scoop
collagen peptides
or use a whole scoop of vanilla protein instead
1/2
cup
yogurt
dairy-free or Greek yogurt works well
cinnamon
your choice of toppings
Instructions
Acorn Squash Yogurt Breakfast Parfait
You can either roast acorn squash the morning of (directions below) or re-heat pre-roasted squash.
In a small bowl, mix yogurt of choice (both dairy-free or Greek yogurt work great here) with protein.
Add yogurt to squash bowl and sprinkle with cinnamon and toppings of choice.
How to Roast Acorn Squash
Preheat oven to 425°.
Cut acorn squash in half.
Scoop out the seeds with a spoon.
Place squash face down on a lined baking sheet.
Bake for 30-40 minutes until squash is golden and flesh is soft.
