Apple Oatmeal Protein Muffins
Flourless apple oatmeal protein muffins are soft, tender, and made with no oil or butter. They are sweet and bursting with apple flavor and crunchy walnuts on top for a healthy breakfast or snack.
1 cup oats 1/4 cup collagen peptides 1/4 cup vanilla protein 2 tbsp ground flaxseed 1 tsp cinnamon 1/2 tsp baking soda 1/4 tsp salt 1/4 cup almond butter 1/2 cup unsweetened applesauce 3 tbsp honey 1 egg 1/2 tsp vanilla extract 1 apple finely diced chopped walnuts for topping
Finely dice apple
Add dry ingedients to the blender (oats, flaxseed, vanilla protein, collagen peptides, cinnamon, baking soda, salt)
Blend to a fine flour
Add wet ingredients to the blender (applesauce, honey, egg, and vanilla extract)
Blend to combine
Stir in diced apple by hand
Add muffin batter to 9 greased muffin tins
Top with chopped walnuts
Bake muffins at 350 for 20-22 minutes
