Banana Chickpea Protein Muffins
Fluffy protein-packed banana chickpea muffins are moist, flourless, and perfect for a healthy breakfast or snack. These are gluten-free, dairy-free, low in sugar, and easy to make.
2 very overripe bananas 1 can chickpeas drained and rinsed 1/2 cup peanut butter (the natural kind with just salt and peanuts) 2 eggs 1/4 cup maple syrup 1 cup rolled oats 1/2 cup vanilla protein powder 1/4 cup collagen peptides 1 tsp vanilla extract 1 tsp cinnamon 1/2 tsp salt 1 tsp baking soda
Preheat oven to 350 degrees
Add ingredients to the food process and blend until smooth
Scoop batter into a greased muffin tin and bake for 18-20 minutes or until you insert ta knife into a muffin and it comes out clean
