Banana Chickpea Protein Muffins

Fluffy protein-packed banana chickpea muffins are moist, flourless, and perfect for a healthy breakfast or snack. These are gluten-free, dairy-free, low in sugar, and easy to make.

Ingredients
  

  • 2 very overripe bananas
  • 1 can chickpeas drained and rinsed
  • 1/2 cup peanut butter (the natural kind with just salt and peanuts)
  • 2 eggs
  • 1/4 cup maple syrup
  • 1 cup rolled oats
  • 1/2 cup vanilla protein powder
  • 1/4 cup collagen peptides
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 tsp baking soda

Instructions
 

  • Preheat oven to 350 degrees
  • Add ingredients to the food process and blend until smooth
  • Scoop batter into a greased muffin tin and bake for 18-20 minutes or until you insert ta knife into a muffin and it comes out clean
