Brussel and Pomegranate Salad
This easy brussel and pomegranate salad with a maple dijon dressing is a healthy and flavorful side dish for any holiday, get-together, or weeknight meal.
Salad 10 oz shredded brussel sprouts (around. 3-4 cups) 1/2 cup pomegranate seeds 1/3 cup crumbled feta (dairy-free if needed) 1/4 cup chopped walnuts Dressing 2 tbsp apple cider vinegar 1 tbsp maple syrup 1 tbsp olive oil 1 tbsp dijon mustard salt & pepper to taste
Shred brussels or if you bought pre-shredded make sure there are no hard pieces
Add shredded brussels, pomegranate seeds, feta, and walnuts to a bowl
Whisk the dressing together in a small dish
When ready to serve pour dressing over the salad, mix to combine, and enjoy!
