Brussel and Pomegranate Salad

This easy brussel and pomegranate salad with a maple dijon dressing is a healthy and flavorful side dish for any holiday, get-together, or weeknight meal.

Ingredients
  

Salad

  • 10 oz shredded brussel sprouts (around. 3-4 cups)
  • 1/2 cup pomegranate seeds
  • 1/3 cup crumbled feta (dairy-free if needed)
  • 1/4 cup chopped walnuts

Dressing

  • 2 tbsp apple cider vinegar
  • 1 tbsp maple syrup
  • 1 tbsp olive oil
  • 1 tbsp dijon mustard
  • salt & pepper to taste

Instructions
 

  • Shred brussels or if you bought pre-shredded make sure there are no hard pieces
  • Add shredded brussels, pomegranate seeds, feta, and walnuts to a bowl
  • Whisk the dressing together in a small dish
  • When ready to serve pour dressing over the salad, mix to combine, and enjoy!
