Brussel, Sweet Potato, & Chicken Sausage Sheet Pan Meal
Easy to make healthy paleo brussel sprout, sweet potato, and chicken sausage sheet pan meal for meal prep or an easy weeknight dinner!
- 3 cups brussel sprouts chopped in half
- 3 cups cubed sweet poatoes (3-4)
- 1 package chicken sausage
- 2 tbsp avocado oil
- 3/4 tsp garlic powder
- 3/4 tsp onion powder
- salt and pepper to taste
Preheat oven to 425
Line a sheet pan with parchment paper or a silicone liner Chop the ends off the Brussel sprouts then chop in half
Peel sweet potatoes then chop into cubes
Slice sausages in half down the middle and then chop into bite-size pieces
Add Brussel sprouts, sweet potatoes, and chicken sausage to a large bowl and mix to combine
Drizzle on avocado oil
Sprinkle in spices then stir to coat everything evenly
Place veggie and sausage mixture on lined baking pans
Bake for 15-20 minutes, flip with a spatula, then bake for another 15- 20 minutes
