Chocolate blueberry froyo clusters are the perfect way to satisfy your sweet tooth with a healthy no-bake treat that is vegan, gluten-free, high in protein, and so easy to make.
In a bowl combine plain yogurt and vanilla protein. Stir well until blended and smooth
Mix in frozen blueberries, ensuring they are evenly distributed in the mixture
Line a baking sheet with parchment paper
Using a spoon drop small clusters of the yogurt and blueberry mixture onto the prepared baking sheet, spacing them apart
Place baking sheet in the freezer and let the cluster freezer for about 2 hours or until firm
When ready to dip in chocolate, melt the chocolate chips and coconut oil in a bowl in the microwave in 30-second increments, stirring in between, until smooth
Add peanut butter to melted chocolate and stir to combine
Remove clusters from the freezer and dip in the melted chocolate to coat the clusters, then place back on the parchment paper
Sprinkle with flaky sea salt if desired
When finished coating the clusters in chocolate place back into the freezer for about 15 minutes to firm up and enjoy
