Chocolate Blueberry Froyo Clusters (vegan/high-protein/gluten-free)

Chocolate blueberry froyo clusters are the perfect way to satisfy your sweet tooth with a healthy no-bake treat that is vegan, gluten-free, high in protein, and so easy to make.

Ingredients
  

  • 1 1/2 cups frozen blueberries
  • 1 cup plain yogurt (vegan if needed)
  • 1 serving vanilla protein
  • 1 cup chocolate chips
  • 1/4 cup peanut butter
  • 1 tsp coconut oil
  • sprinkle of flaky sea salt

Instructions
 

  • In a bowl combine plain yogurt and vanilla protein. Stir well until blended and smooth
  • Mix in frozen blueberries, ensuring they are evenly distributed in the mixture
  • Line a baking sheet with parchment paper
  • Using a spoon drop small clusters of the yogurt and blueberry mixture onto the prepared baking sheet, spacing them apart
  • Place baking sheet in the freezer and let the cluster freezer for about 2 hours or until firm
  • When ready to dip in chocolate, melt the chocolate chips and coconut oil in a bowl in the microwave in 30-second increments, stirring in between, until smooth
  • Add peanut butter to melted chocolate and stir to combine
  • Remove clusters from the freezer and dip in the melted chocolate to coat the clusters, then place back on the parchment paper
  • Sprinkle with flaky sea salt if desired
  • When finished coating the clusters in chocolate place back into the freezer for about 15 minutes to firm up and enjoy
