Chocolate Peppermint Bites
Chocolate peppermint bites are a healthy no-bake holiday treat that is high-protein, gluten-free, dairy-free, and so delicious.
- 1 cup almond butter
- 1/4 cup honey
- 6 tbsp chocolate protein
- 6 tbsp coconut flour
- 2 tbsp cacao powder
- 1/2 tsp vanilla extract
- 1 tsp peppermint extract
- 1/2 tsp salt
Topping
- 1/2 cup chocolate chips
- 1/2 tbsp coconut oil
- crushed candy canes
Add all ingredients except the toppings into a bowl and mix to form a dough
Roll or scoop dough into balls and place on a lined pan or baking sheet
Put the protein truffles in the freezer to harden (about 10 minutes)
Melt chocolate chip and coconut oil in a small dish
Add candy canes to a plastic bag and crush them into small pieces
Put candy cane pieces in a small dish
Remove truffles from the freezer when they have hardened
Dip half of the truffle into the melted chocolate and then into the candy cane pieces
Put the truffles back on the tray and put the tray in the fridge or freezer to harden the chocolate
