Cilantro Lime Veggie Quinoa Salad

This easy to prep Cilantro Lime Veggie Quinoa Salad is a zesty and tasty high-protein vegan salad that is perfect for meal prep, parties, or weekday lunches.

Ingredients
  

Salad

  • 1 cup dry quinoa
  • 1 1/2 cups bone broth, chicken broth, or veggie broth
  • 1/2 green cabbage
  • 2 bell peppers (yellow, orange, or red)
  • 1/2 large red onion
  • 1 can black beans (drained and rinsed)
  • 1 bundle cilantro

Dressing

  • 2 limes
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tsp sea salt

Instructions
 

  • Quinoa can be made ahead of time. Drain and rinse your quinoa as directed on the package with a mesh strainer
  • Add quinoa and broth to a small pot and bring to a boil
  • Once boiling reduce heat to low and simmer covered for 12 minutes or as directed on the package
  • While the quinoa is cooking chop your cabbage, bell peppers, red onion, and cilantro
  • Add chopped cabbage, onion, peppers, and cilantro to a large mixing bowl
  • Drain and rinse black bean and add to bowl
  • Once quinoa is fluffy and all the liquid has been absorbed let cool in the fridge before adding to the salad
  • Whisk together two freshly squeezed limes, olive oil, honey, salt, and pepper
  • When quinoa is cooled add to the large mixing bowl with the veggies. Pour dressing over quinoa salad and mix well
