Quinoa can be made ahead of time. Drain and rinse your quinoa as directed on the package with a mesh strainer
Add quinoa and broth to a small pot and bring to a boil
Once boiling reduce heat to low and simmer covered for 12 minutes or as directed on the package
While the quinoa is cooking chop your cabbage, bell peppers, red onion, and cilantro
Add chopped cabbage, onion, peppers, and cilantro to a large mixing bowl
Drain and rinse black bean and add to bowl
Once quinoa is fluffy and all the liquid has been absorbed let cool in the fridge before adding to the salad
Whisk together two freshly squeezed limes, olive oil, honey, salt, and pepper
When quinoa is cooled add to the large mixing bowl with the veggies. Pour dressing over quinoa salad and mix well
