Healthy Beef with Broccoli
Healthy beef and broccoli stir-fry is an easy 30-minute meal that is flavorful and family-friendly. This copycat takeout recipe is made with fresh and flavorful ingredients for a healthier version of your favorite stir-fry.
1 lb flank or skirt steak 1 medium diced onion 5 cups chopped broccoli 1/3 cup water Sauce 6 tbsp coconut aminos (substitute soy sauce or tamari) 1 orange squeezed 2 tsp honey (optional for sweetness) 2 tbsp grated ginger 1 tbsp minced garlic 2 tsp sesame oil 1/4-1/2 tsp red pepper flakes to your spice preference 1 tbsp arrowroot starch (for thickening the sauce)
Mix the sauce ingredients and set aside
Chop steak into bite size pieces
Finely dice onion
Chop broccoli into bite-size florets
Heat a large saute pan to medium and add water and broccoli. Let the broccoli steam for about 4-5 minutes until tender but still a little crisp.
Remove broccoli and set aside
Spray saute pan with oil and add onions and cook until they are soft.
Add steak to the onions and cook for about 3-4 minutes.
Add broccoli back to the saute pan and pour the sauce on top of everything.
Mix and cover. Let cook until steak is fully cooked and broccoli has soften.
Serve with rice, cauliflower rice, quinoa, or a combination
