Pineapple Cucumber Salsa
Feeling tropical with this pineapple cucumber salsa that is easy, fresh, and crunchy. This healthy, vegan, and gluten-free dish can be an appetizer, salad, or served on top of your favorite dish.

2 cups chopped pineapple 1 1/2 cups chopped persian cucumbers 1/3 cup diced red onion 1-2 jalapenos finely diced 1/4 cup diced cilantro 1-2 limes juiced 1/2 tsp sea salt or to your taste
Peel cucumbers
Chop pineapple and cucumber into small pieces of similar size
Finely dice red onion, jalapeno, and cilantro
Add cucumber, pineapple, onion, jalapeno, and cilantro to a large bowl
Juice 1-2 limes and sprinkle on salt
Mix to combine and serve immediantly or store in the fridge for up to 3-5 days
