Pink Beet Protein Pancakes (baby/toddler friendly)

Ingredients
  

  • 2 ripe bananas (the riper the better)
  • 2-3 cooked beets (roasted make for the brightest pink)
  • 2 cups rolled oats
  • 2 servings collagen peptides (optional for protein)
  • 2 eggs
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4-1/2 cup milk (or as needed to thin)

Instructions
 

  • Add all ingredients to a blender and blend to form batter
  • Heat a non-stick pan or griddle over medium low heat. Lightly grease with oil or butter if needed
  • Pour small circles of batter onto the pan. Cook for 2-2 minutes, or until bubbles start forming on the surface. Flip and cook for another 1-2 minutes, until golden and cooked through.
