Pink Beet Protein Pancakes (baby/toddler friendly)

2-3cooked beets (roasted make for the brightest pink)
2cupsrolled oats
2servingscollagen peptides (optional for protein)
2eggs
1/2tspcinnamon
1/2tspbaking powder
1tspvanilla extract
1/4-1/2cupmilk (or as needed to thin)
Instructions
Add all ingredients to a blender and blend to form batter
Heat a non-stick pan or griddle over medium low heat. Lightly grease with oil or butter if needed
Pour small circles of batter onto the pan. Cook for 2-2 minutes, or until bubbles start forming on the surface. Flip and cook for another 1-2 minutes, until golden and cooked through.
