Pumpkin Frozen Yogurt Bites
Pumpkin frozen yogurt bites are the perfect high protein snack to use up your can of pumpkin. These bites have a hard chocolate outer shell and are filled with a creamy high-protein pumpkin yogurt.

Ingredients

cup
plain yogurt (Greek or a thick vegan yogurt)
1/2
cup
pumpkin puree
1/4
cup
peanut butter (or nut butter of choice)
2
scoops
vanilla protein
1
tsp
vanilla extract
1/2
tsp
cinnamon or pumpkin pie spice
1/4
tsp
salt
1
cup
chocolate chips
1
tsp
coconut oil (melted)
Instructions
Mix yogurt, pumpkin, nut butter, vanilla, protein, cinnamon, and salt in a bowl
Drop by spoonfuls onto a lined cookie sheet and place in the freezer until frozen (around 2-3 hours)
Melt the chocolate with coconut oil
Dip each bite into the chocolate and return to the freezer for another 20 minutes
Store in the freezer and let thaw for a few minutes before eating for a frozen yogurt bite, or store in the fridge for a smooth and creamy yogurt bite
