Rainbow Sheet Pan Meal

Ingredients
1
chopped onion
(I use a sweet onion or a red onion)
1-2
chopped bell peppers
3
cups
chopped broccoli
2-3
cups
cubed sweet poatoes
(can also subsitute for butternut squash)
1
package of chicken sausage sliced into rounds
1
can
chickpeas
(drained and rinsed)
2
tbsp
avocado oil
1
tsp
cumin
1
tsp
chili powder
1
tsp
paprika
1/2
tsp
garlic powder
salt and pepper to taste
Instructions
Preheat oven to 425
Whisk together oil with spices and set aside
Line a sheet pan with parchment paper or a
silicone liner
Chop veggies (or buy them pre-chopped) and add to a large mixing bowl
Slice sausages (if you eat animal protein) and add to the bowl
Drain and rinse the can of chickpeas and mix into the bowl of veggies and sausage
Drizzle oil and spice mixture on top then stir to cover
Place veggie and sausage mixture on lined baking pans
Bake for 30-35 minutes
