Spicy Pumpkin and Turkey Curry

onion diced

ground turkey

bag frozen peas

cup
pumpkin puree

can
fire roasted tomatoes

cup
coconut milk

tsp
curry powder
1/2
tsp
chili powder
1/2
tsp
turmeric powder
1/2
tsp
ground ginger
(or use fresh if you have it on hand)
1/2
tsp
cumin
1/2-1
tsp
cayenne pepper
(start with less and add to taste preference)
salt and pepper to taste
Instructions
Dice onion
Heat a large skillet to medium heat
Spray with oil and saute onion for a few minutes
Add ground turkey to skillet and cook until no longer pink
Stir in pumpkin, can of tomatoes, coconut milk and spices
Add the bag of frozen peas and mix to combine
Cover and let simmer for 20-30 minutes
Serve with rice, quionoa, or cauliflower rice and enjoy
