Spinach Banana Blender Muffins (Healthy Toddler Recipe)

Ingredients
  

  • 2 overripe bananas (the riper the better)
  • 2 cups fresh spinach
  • 1 large egg
  • 1 tbsp coconut oil (melted and cooled)
  • ½ cup Greek yogurt (plain, full fat works best)
  • 1 teaspoon vanilla extract
  • 1 ¼ cups rolled oats
  • ½ teaspoon cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda

Instructions
 

  • Preheat oven to 375°F and lightly grease a mini muffin tray or line with silicone liners.
  • In a blender, add all the wet ingredients first—bananas, spinach, coconut oil, egg, Greek yogurt, and vanilla. Blend until smooth.
  • Add the dry ingredients—oats, cinnamon, baking powder, and baking soda—on top of the wet mixture. Blend again until fully combined and creamy.
  • Spoon the batter into the mini muffin cups, filling each about ¾ full.
  • Bake for 9-11 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the mini muffins cool completely before serving—they’re perfectly sized for toddler hands!
