Trader Joe's Romesco Pasta
Trader Joe's romesco pasta is an easy healthy meal that comes together in under 30 minutes for a healthy meal or meal prep.

- 1 small sweet onion, diced
- 1 pack chicken sausage, chopped into bite-size pieces
- 3 cups broccoli, chopped
- 8oz box of pasta (I use chickpea shells)
- 1 container Trader Joe's romesco dip
Chop onions, broccoli, and chicken sausage
Boil water and make pasta as directed, but cook 1-2 minutes less than the box instructs to keep pasta from getting mushy
Heat a large skillet to medium, spray skillet with oil and saute the onions for a couple of minutes
Once onions have started to soften add chicken sausage to the pan few a few minutes
Next, add broccoli to pan and stir together. Cover and let cook stirring occasionally
Once broccoli and sausage mixture is cooked turn off the heat. Add pasta and romesco dip then stir to combine and enjoy!
