Turkey & Pumpkin Chili
Turkey and pumpkin chili is healthy, easy, and the perfect fall soup to warm you up on chilly days.
- 1 onion diced
- 2 bell peppers diced(red, yellow, or orange)
- 1 jalapeno finely diced (optional, but suggested)
- 1 lb ground turkey
- 3 tbsp chili powder
- 1 tbsp cumin
- 1 tbsp paprika
- 1/2 tsp salt
- pinch cayenne pepper (optional for heat)
- 2 cans diced tomatoes
- 1 can of pumpkin puree
- 1 can of black beans
- 1 can of kidney beans
Heat a large skillet or pot to medium heat
Add a little oil and saute onion for 5 minutes
Add chopped peppers and saute for another 5 minutes
Add the ground turkey and break up the meat and cook until no longer pink
Mix in the spices
Drain and rinse beans
Add beans, pumpkin, and diced tomatoes to the skillet and stir to combine
Cover, reduce heat, and let simmer for 10-15 minutes
Serve as is or with desired toppings
