Warm Kale Autumn Salad

Welcome to your favorite fall salad! Warm kale autumn salad is the perfect way to get in veggies when you are craving warm and cozy meals.

Ingredients
  

Salad

  • 1 diced and sauteed onion
  • 1 package sauteed chicken sausage (your favorite brand)
  • 3 cups roasted butternut squash or sweet potatoes
  • 2 small chopped apples
  • 12 cups chopped kale (I buy a bag of pre-chopped and washed kale)
  • 4 tbsp pumpkin seeds
  • salt and pepper to taste

Dressing

  • 2 tbsp mustard
  • 2 tbsp maple syrup
  • 4 tbsp apple cider vinegar

Instructions
 

  • Heat up a pan to medium heat
  • Dice apples
  • Mix the dressing in a small dish and set it to the side
  • Add a little oil to your pan to prevent sticking
  • Add kale, onions, butternut or sweet potatoes, chicken sausage, and apple to the pan
  • Mix and sautee and the kale is wilted
  • Pour dressing over kale salad and mix to coat
  • Remove from heat and sprinkle on pumpkin seeds and salt and pepper to your taste
  • Enjoy immediately or salad can store in the fridge for up to 4-5 days
