1serving of sautéed chicken sausage (your favorite brand)
1/2cuproasted butternut squash or sweet potatoes
2tbsppomegranate seeds
1small peeled orange or clementine
2tbspchopped walnuts
Dressing
1/2tbspdijon mustard
1/2tbspmaple syrup
1tbspapple cider vinegar
Instructions
Heat up a pan to medium heat
Peel orange
Mix your dressing in a small dish and set it to the side
Add a little oil to your pan to prevent sticking
Add your sautéed onions, chicken sausage (or vegan substitute such as chickpeas), squash or sweet potatoes to the pan and sauté on the stove for about 3-5 minutes stirring occasionally
Add your chopped kale and mix until wilted
Pour dressing over kale salad and mix to coat
Remove from heat and sprinkle on pomegranate seeds, walnuts, and salt and pepper to your taste
