Winter Fruit Salsa Salad
This fresh bright, and crunchy winter salsa salad is made for dipping chips, topping on fish, chicken, tacos, salads, or enjoying as a colorful side dish.
2 cup Persian or English cucumbers 1 1/2 cups pomegranate seeds 1 1/2 cup clementine oranges 1/2 red onion 2/3 cup crumbled feta cheese 1/4 cup mint 2 limes juiced 1 tbsp olive oil 1 tbsp honey salt to taste
Chop cucumbers into small pieces
De-seed pomegranates
Peel and chop clementine oranges
Dice red onion
Chop mint leaves
Add cucumbers, pomegranate, oranges, red onion, mint, and feta to a large bowl
In a small dish juice two limes then mix together with honey and olive oil
Toss salad with the dressing to combine
Add salt to taste 1/2-1 tsp and enjoy as a side or with chips for dipping
