Winter Rainbow Kale Salad

If you thought salads were just for summer, this winter rainbow salad will surely change your mind. Packed with all the colors and flavor of fresh winter produce, this winter rainbow salad is bright, colorful, and tastes great while supporting your health.

Ingredients
  

Salad:

  • 2 bunches of chopped lacinato kale
  • 1/4 head chopped purple cabbage
  • 1 cup shredded carrots
  • 3/4 cup pomegranate seeds
  • 2 peeled oranges or clementines
  • 1/3 cup chopped walnuts

Orange Vinaigrette Dressing:

  • 1/4 cup of juice squeezed from an orange
  • 1 tbsp olive oil
  • 1 tbsp maple syrup
  • 2 tsp djion mustard

Instructions
 

  • Chop kale and cabbage.
  • Whisk together the orange vinaigrette dressing
  • In a large bowl add kale and dressing then massage the kale with hands for a minute
  • Add the cabbage, carrots, pomegranate seeds, walnuts, peeled oranges and walnuts
  • Toss to combine and enjoy
