Zucchini Oatmeal Chocolate Chip Cookies

Soft, chewy cookies made with zucchini, banana, oats, almond flour, honey, and chocolate chips. An easy kid and toddler-friendly breakfast cookie or snack that the whole family will love.

Ingredients
  

  • 1 ripe banana mashed
  • 1 large egg
  • 2 tablespoons melted coconut oil
  • 1-2 tablespoon honey
  • 1 teaspoon vanilla extract
  • 1 cup shredded zucchini squeezed dry
  • 1 cup almond flour
  • 1 ½ cups old-fashioned rolled oats
  • 2 tablespoons chia seeds
  • 1 teaspoon cinnamon
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup chocolate chips

Instructions
 

  • Preheat oven to 350°F and line a baking sheet with parchment paper.
  • Shred the zucchini and squeeze out the excess moisture using a clean kitchen towel or paper towels.
  • In a large bowl, mash the banana. Add the egg, melted coconut oil, honey, and vanilla. Mix until combined.
  • Stir in the shredded zucchini.
  • Add the almond flour, oats, chia seeds, cinnamon, baking soda, baking powder, and salt. Mix until just combined.
  • Fold in the chocolate chips.
  • Let the dough rest for 5–10 minutes.
  • Scoop the dough onto the prepared baking sheet and gently flatten each cookie.
  • Bake for 12–15 minutes, or until the edges are lightly golden and the centers are set.
  • Let cool on the baking sheet for about 10 minutes before transferring to a cooling rack.
