Preheat oven to 350°F and line a baking sheet with parchment paper.
Shred the zucchini and squeeze out the excess moisture using a clean kitchen towel or paper towels.
In a large bowl, mash the banana. Add the egg, melted coconut oil, honey, and vanilla. Mix until combined.
Stir in the shredded zucchini.
Add the almond flour, oats, chia seeds, cinnamon, baking soda, baking powder, and salt. Mix until just combined.
Fold in the chocolate chips.
Let the dough rest for 5–10 minutes.
Scoop the dough onto the prepared baking sheet and gently flatten each cookie.
Bake for 12–15 minutes, or until the edges are lightly golden and the centers are set.
Let cool on the baking sheet for about 10 minutes before transferring to a cooling rack.
