I love how simple and tasty these meatballs are on their own, and then add the buffalo sauce and everyone will want them! These healthy turkey and zucchini meatballs come together quickly with hidden veggies for extra nutrition and can be cooked in the air fryer or the oven. They can easily be made ahead of time and can be frozen for leftovers.

Healthy Turkey Zucchini Buffalo Meatballs
These turkey zucchini buffalo meatballs are easy to make and full of flavor. Mix a few simple ingredients in one bowl for a veggie-loaded protein recipe that makes for an easy meal or meal prep.
Ingredients
- 1 lb ground turkey
- 1 cup shredded zucchini (about 1 zucchini with the extra moisture squeezed out)
- 1/2 cup oats ground into flour
- 1/4 cup nuritional yeast
- 1 egg
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp sea salt
- 1 tsp ground black pepper
Instructions
- Shred the zucchini then place it in a clean kitchen towel and squeeze the towel tightly over the sink to get rid of the extra moisture in the zucchini.
- Prep your oats by making them into flour in a blender. Blend 1/2 cup of oats till it forms a fine flour.
- Mix turkey, zucchini, oats, nutritional yeast, egg, and seasoning in a large bowl.
- Roll into balls using a cookie dough scoop to make even-sized meatballs.
- Cook in the air fryer at 400 degrees for 10-12 minutes. Cook for 5 minutes then flip the meatballs and cook for an additional 5 minutes. You can also bake these meatballs in the oven at 400 degrees for 18-20 minutes flipping halfway.
- After the meatballs are cooked add them to a skillet on medium-low and pour the buffalo sauce on the meatballs and stir until they are all coated, then serve and enjoy.
