Vegan Flourless Peanut Butter Blondies

This flourless, peanut butter blondie recipe has only six simple ingredients. This treat is unbelievably decadent even though it's made with healthy, real-food ingredients.

Ingredients
  

  • 1 cup peanut butter the natural kind made with only peanuts and salt
  • 5 tbsp honey
  • 2 scoops collagen peptides
  • 1/4 cup peanut flour
  • 2 tbsp flaxseed
  • 6 tbsp water
  • 1/2 tsp baking soda
  • chocolate chips I like the enjoy life brand or Trader Joe’s Completely Cacao chips

Instructions
 

  • Make 2 flax eggs by mixing 2 tbsp of ground flaxseed with 6 tbsp of water in a bowl, then let sit in the fridge for about 15 minutes to thicken up.
  • Preheat the oven to 350° and line a 9 x 5 in baking pan with parchment paper.
  • Measure out 1 cup peanut butter and microwave for about 45 seconds to soften. 
  • Stir in honey, peanut flour, collagen peptides, baking soda, and flax eggs. 
  • Pour into baking pan and dot the top with chocolate chips.
  • Bake for 20-25 minutes or until golden brown.
  • Let cool, slice, and DON’T give all the vegan blondies away!
