Blended Blueberry Chia Pudding

The easiest creamiest way to start your day is with this blueberry whipped chia pudding that tastes like a blueberry muffin and is high in protein, vegan, and gluten-free.

Ingredients
  

Blueberry Chia Seed Pudding

  • 1 1/2 cups milk of choice may need more or less depending on how thick or thin you like
  • 6 tbsp chia seeds
  • 2 scoops vanilla protein
  • 1 cup frozen blueberries
  • 1/2 tsp cinnamon (optional)
  • 1/2 tsp vanilla extract (optional)
  • 1/4 tsp salt (optional)

Optional Toppings

  • fresh or frozen blueberries
  • granola
  • nuts or nut butter
  • yogurt

Instructions
 

  • In a blender add milk, chia seeds, protein powder, frozen blueberries, cinnamon, salt, and vanilla extract
  • Stir together with a spoon and let thicken in the fridge for at least 30 minutes or overnight. (I like to stir once more about 5 minutes after stirring to really mix well)
  • Once chia pudding has thickened blend in the blender till smooth and creamy adding extra milk only if needed
  • Layer with toppings of choice such as granola, fresh or frozen, blueberries, yogurt, or nuts and enjoy
