The easiest creamiest way to start your day is with this blueberry whipped chia pudding that tastes like a blueberry muffin and is high in protein, vegan, and gluten-free.
1 1/2cupsmilk of choice may need more or less depending on how thick or thin you like
6tbspchia seeds
2scoops vanilla protein
1cupfrozen blueberries
1/2tspcinnamon (optional)
1/2tspvanilla extract(optional)
1/4tspsalt(optional)
Optional Toppings
fresh or frozen blueberries
granola
nuts or nut butter
yogurt
Instructions
In a blender add milk, chia seeds, protein powder, frozen blueberries, cinnamon, salt, and vanilla extract
Stir together with a spoon and let thicken in the fridge for at least 30 minutes or overnight. (I like to stir once more about 5 minutes after stirring to really mix well)
Once chia pudding has thickened blend in the blender till smooth and creamy adding extra milk only if needed
Layer with toppings of choice such as granola, fresh or frozen, blueberries, yogurt, or nuts and enjoy
