Blueberry Lemon Overnight Oats

Bright, refreshing, and super easy to meal prep, these blueberry lemon overnight oats are a perfect protein-packed summer breakfast.

Ingredients
  

  • 1/2 cup oats
  • 1 tbs chia seeds
  • 1 scoop vanilla protein
  • 1/2 cup plain yogurt
  • 1/2-1 cup milk (start with 1/2 cup and add more as needed to reach desired consistency)
  • 1 small lemon (juice and zest)
  • pinch sea salt
  • 1/2 cup blueberries

Optional toppings

  • granola, nut butter, coconut

Instructions
 

  • Add oats, chia seeds, protein, yogurt, milk, zest and the juice of a lemon, and salt to a bowl, jar, or container
  • Mix to combine then let thicken in the fridge overnight or for at least an hour
  • Top with blueberries and any other toppings of choice and enjoy
