Blueberry Lemon Overnight Oats
Bright, refreshing, and super easy to meal prep, these blueberry lemon overnight oats are a perfect protein-packed summer breakfast.

- 1/2 cup oats
- 1 tbs chia seeds
- 1 scoop vanilla protein
- 1/2 cup plain yogurt
- 1/2-1 cup milk (start with 1/2 cup and add more as needed to reach desired consistency)
- 1 small lemon (juice and zest)
- pinch sea salt
- 1/2 cup blueberries
Optional toppings
- granola, nut butter, coconut
Add oats, chia seeds, protein, yogurt, milk, zest and the juice of a lemon, and salt to a bowl, jar, or container
Mix to combine then let thicken in the fridge overnight or for at least an hour
Top with blueberries and any other toppings of choice and enjoy
