Broccoli and Chickpea Apple Salad
Healthy broccoli and chickpea apple salad is a flavorful, light, and crunchy salad, that is packed with plant-based protein and topped with a honey dijon vinegarette that is great for weekly meal prep or summer BBQs

Salad 1 head of broccoli 1 apple 1 cup shredded carrots 1/4 cup green onions 1 can drained and rinsed chickpeas 1/3 cup tart dried cherries Dressing 3 tbsp apple cider vinegar 1 tbsp olive oil 1 tbsp djion mustard 1 tbsp honey salt and pepper to taste
Chop broccoli, apples, green onions, and dried cherries
Add chopped fruits and veggies to a large bowl
Drain and rinse a can of chickpeas and add to the bowl
Whisk together apple cider vinegar, olive oil, dijion mustard, honey, salt and pepper to make the dressing
Pour dresssing over the salad and toss to combine
Serve immediatley or store in the fridge for up to 5 days
