Creamy Roasted Tomato Soup

The best homemade tomato soup is made with roasted tomatoes, red pepper, onions, and fresh basil. Creamy roasted tomato soup is full of flavor, high-protein, and dairy-free.

Ingredients
  

  • 3 lbs roma or grape tomatoes
  • 1 red bell pepper
  • 1 sweet onion
  • garlic (optional)
  • 2 cups chicken bone broth (can subsiuute for veggie or chicken broth0
  • 1/4 cup coconut milk
  • 1/4 cup loosely packed basil leaves
  • 1 tsp oregano
  • 1/4 tsp paprika
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 400 degrees
  • Chop tomatoes in half
  • Chop onion and red pepper
  • Add veggies to a lined baking pan
  • Spray veggies with oil and roast at 400 for about 35-40 minutes
  • Once veggies are roasted transfer to a blender (or food processor) with remaining ingredients and blend until smooth
  • Add soup to a pot and simmer until warm and enjoy
