Creamy Roasted Tomato Soup
The best homemade tomato soup is made with roasted tomatoes, red pepper, onions, and fresh basil. Creamy roasted tomato soup is full of flavor, high-protein, and dairy-free.
3 lbs roma or grape tomatoes 1 red bell pepper 1 sweet onion garlic (optional) 2 cups chicken bone broth (can subsitute for veggie or chicken broth0 1/4 cup coconut milk 1/4 cup loosely packed basil leaves 1 tsp oregano 1/4 tsp paprika salt and pepper to taste
Preheat oven to 400 degrees
Chop tomatoes in half
Chop onion and red pepper
Add veggies to a lined baking pan
Spray veggies with oil and roast at 400 for about 35-40 minutes
Once veggies are roasted transfer to a blender (or food processor) with remaining ingredients and blend until smooth
Add soup to a pot and simmer until warm and enjoy
