Curry Chicken Salad

Curry chicken salad is a high-protein savory, sweet, quick, and healthy meal or meal prep for the week.

Ingredients
  

Chicken Salad:

  • 3 cups shredded chicken
  • 2/3 cup chopped celery
  • 1/3 cup chopped green onion
  • 2/3 cup golden raisins
  • 1/2 cup chopped cashews

Chicken salad dresssing:

  • 1/3 cup mayo
  • 1/3 cup greek yogurt
  • 1 tbsp honey
  • 2 tsp curry powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • salt and pepper to taste

Instructions
 

  • Shred cooked chicken
  • Chop celery, green onions, and cashews
  • In a bowl mix together chicken, celery, green onions, raisins, and cashews
  • In a small bowl combine mayo, greek yogurt, honey, and spices
  • Add the dressing to the chicken and mix together
  • Enjoy on bread or wrap, or as a dip with veggies and crackers
