Curry Chicken Salad
Curry chicken salad is a high-protein savory, sweet, quick, and healthy meal or meal prep for the week.
Course Main Course, Salad
Chicken Salad:
- 3 cups shredded chicken
- 2/3 cup chopped celery
- 1/3 cup chopped green onion
- 2/3 cup golden raisins
- 1/2 cup chopped cashews
Chicken salad dresssing:
- 1/3 cup mayo
- 1/3 cup greek yogurt
- 1 tbsp honey
- 2 tsp curry powder
- 1 tsp garlic powder
- 1 tsp onion powder
- salt and pepper to taste
Shred cooked chicken
Chop celery, green onions, and cashews
In a bowl mix together chicken, celery, green onions, raisins, and cashews
In a small bowl combine mayo, greek yogurt, honey, and spices
Add the dressing to the chicken and mix together
Enjoy on bread or wrap, or as a dip with veggies and crackers
