  • Spices: in this recipe, we will need curry powder, garlic powder, onion powder, salt and pepper

  • Shred your cooked chicken or rotisserie chicken. Here are 4 easy ways to shred chicken
  • Chop celery, green onions, and cashews
  • In a bowl mix together chicken, celery, green onions, raisins, and cashews
  • In a small bowl combine mayo, greek yogurt, honey, and spices
  • Add the dressing to the chicken and mix together to combine
  • Enjoy or store in the fridge for up to 4-5 days

Substitutions:

  • Swap golden raisins for any raisins you have on hand
  • Swap the green onions for red onions if you don’t have any on hand
  • Chopped grapes can also be used in place of raisins
  • You can substitute the cashews for almonds or pistachios

  • Shred chicken easily by using a hand mixer or stand mixer
  • A great way to use up leftover chicken or rotisserie chicken
  • When I crave chicken salad and have no chicken cooked I throw it in the instant pot to cook then shred it with a hand mixer

  • 1/3 cup chopped green onion
  • 2/3 cup golden raisins

Chicken salad dresssing:

  • 1/3 cup mayo
  • 1/3 cup greek yogurt
  • 1 tbsp honey
  • 2 tsp curry powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • salt and pepper to taste
