Easy Pickled Red Onions
Learn to make easy pickled red onions that are so flavorful, simple to make, and gut-friendly.

- 1 red onion
- 1/2 cup water
- 1/2 cup apple cider vinegar
- 1 tbsp monk fruit (or other sweetener)
- 1 tsp sea salt
Thinly slice the red onion and put it in a glass jar or container
Add water, vinegar, salt, and sweetener to a pan and heat to simmer then turn off (can also use a microwave)
Pour hot vinegar mixture over onions and shake to mix
Seal jar and refrigerate to let the onions marinate in mixture for 2+ hours
These healthy red onions stay fresh for up to two weeks in the fridge
