They have these yummy pickled onions that you can top your salads and bowls with. I am obsessed with them so, of course, I had to try and recreate them at home. 

Healthy pickled red onions are easy to make with only 5 ingredients and it takes about 5 minutes to make. Pickled onions add so much flavor to meals, are good for your gut, and are vegan and gluten-free.

Easy Pickled Red Onions

Ingredients
  

  • 1 red onion
  • 1/2 cup water
  • 1/2 cup apple cider vinegar
  • 1 tbsp monk fruit (or other sweetener)
  • 1 tsp sea salt

Instructions
 

  • Thinly slice the red onion and put it in a glass jar or container
  • Add water,  vinegar, salt, and sweetener to a pan and heat to simmer then turn off (can also use a microwave)
  • Pour hot vinegar mixture over onions and shake to mix
  • Seal jar and refrigerate to let the onions marinate in mixture for 2+ hours
  • These healthy red onions stay fresh for up to two weeks in the fridge
