Place in a single row on a lined baking tray and freeze for a few hours or overnight
Once watermelon is frozen add to a food processor with coconut milk and blend on high (you can add optional sweetener or lime juice at this time as well)
Scrap down the sides occasionally and blend until a smooth consistency, this can take 5-6 minutes
Enjoy immediately or store in a freezer-safe container and let thaw out before serving
