Healthy Sweet & Savory Breakfast Bowl

This filling sweet and savory breakfast bowl is made with sweet potatoes, chicken sausage, veggies, eggs, and avocado. It is the perfect blood-sugar balancing way to start the day or can be enjoyed for lunch, dinner, and meal prepped for the week.

Ingredients
  

  • 5 cups baby spinach
  • 3-5 sweet potatoes, peeled and chopped (depending on the size)
  • 1 pack of chicken sausage
  • 1 12 oz container of cherry or grape tomatoes
  • 5 eggs
  • 3 avocados

Instructions
 

  • Peel and dice sweet potatoes and roast at 425 for 25 minutes or until cooked
  • Chop chicken sausage into rounds
  • Chop cherry or grape tomatoes in half
  • Sauté chicken sausage in a skillet over medium for about 5 minutes until cooked and a little browned
  • Sauté tomatoes in a skillet over medium for about 5 minutes until softened
  • Store potatoes, tomatoes, and sausage in containers to heat up for breakfast throughout the week
  • To serve, heat up tomatoes, sweet potatoes, and chicken sausage in a skillet or microwave
  • Cook an egg sunny side up, over easy, or to your liking
  • Add baby spinach to a bowl and top with potatoes, tomatoes, sausage, and egg
  • Slice half an avocado and add to your breakfast bowl
  • Add salt, pepper, and spices to your preference
