Mango Edamame Salad

Healthy edamame mango salad is easy to make and makes the perfect side dish or high protein vegan salad for meal prep or a bbq.

Ingredients
  

  • 3 mangos
  • 2 cups shelled edamame
  • 1 can drained and rinsed black beans
  • 1 can drained corn
  • 1/4 red onion
  • 1/4 cup chopped cilantro
  • 2-3 tbsp lime juice
  • 1 tbsp apple cider vinegar
  • 1 tbsp olive oil
  • salt and pepper to taste

Instructions
 

  • Peel and dice mangos
  • Chop red onion and cilantro 
  • Drain and rinse corn and beans
  • Cook shelled edamame as directed on package 
  • In a large bowl combine mangos, red onion, corn, black beans, edamame, and cilantro
  • Add the juice of two limes, oil, apple cider vinegar, and salt and pepper
  • Mix to combine
