Spicy Ginger Cucumber, Pepper, and Chickpea Salad
Spicy ginger cucumber, pepper, and chickpea salad is my take on the viral salad that is sweet, crunchy, spicy, and full of flavor. It works great as a snack, side dish, salad topper, or light lunch.

6 Persian cucumbers or 1 English cucumber 2 Bell peppers (red or orange) or about 16-20 mini sweet peppers 1 can Chickpeas drained and rinsed 1/3 cup Ginger dressing 2 tbsp Chili Oil Crunch (or to taste) 2 tbsp Everything but the bagel seasoning (or to taste)
Slice cumbers into bite-size pieces (peeling cucumbers is optional to your personal preference)
Chop peppers into bite-size pieces
Drain and rinse and can of chickpeas
Add veggies and chickpeas to a bowl and top with ginger dressing, chili oil crunch, and everything but the bagel seasoning
Mix well and serve as is or enjoy as a side, on top of a salad or with your favorite meal
