Recipe Tips:

  • I like Persian or English cucumbers in this recipe but any cucumber will work
  • You don’t have to peel Persian or English cucumbers as they both have thinner skin, however, I prefer my cucumbers peeled, but either way works
  • You can use bell peppers (red and orange, or yellow but not green) or mini-sweet peppers
  • Feel free to make your own homemade ginger dressing or buy your favorite store-bought
  • Store in the fridge in an air-tight container for up to 5 days
  • I love to enjoy this salad with a side of rice and a protein of choice such as chicken or salmon
