Don’t worry it works just as well as muffins. These gluten-free and dairy-free pumpkin bars have minimal ingredients and are refined-sugar-free for a healthy snack or dessert.

  • Pumpkin: make sure to use pumpkin puree and not pumpkin pie filling

  • Egg: two eggs, I have not tried these with a vegan egg replacement
  • Maple Syrup: adds a little sweetness to the pumpkin
  • Collagen Peptides: add an extra punch of protein
  • Cinnamon: for that warm flavor

Recipe Tips:

  • Customize your toppings with raisins, chocolate chips, white chocolate chips, nuts or a combo
  • I like this silicone mini bar pan for baking these bars
  • These bars can also be made in a muffin pan
  • Collagen peptides are optional but with them in this recipe, each bar has over 9 grams of protein

Ingredients
  

Pumpkin Snacking Bars

  • 3/4 cup pumpkin puree
  • 1/4 cup maple syrup
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/2 cups almond flour
  • 2 scoops collagen peptides (optional)
  • 1 tsp baking sodea
  • 1/2 tsp salt
  • 1-2 tsp cinnamon

Optional Add-ins

  • mini chocolate chips
  • white chocolate chips
  • chopped nuts
  • raisins

Instructions
 

  • Preheat oven to 350
  • Combine pumpkin, eggs, vanilla, and maple syrup in a large mixing bowl
  • Mix almond flour, salt, baking soda, and cinnamon in a separate bowl
  • Combine dry ingredients into wet ingredients until the batter is smooth
  • You can mix in mini chocolate chips, white chocolate chips, or raisins now, but I like to save some for the tops
  • Fill greased bar or muffin cups 3/4 full with batter
  • Top with your favorite add-ins. I did some with mini chocolate chips, some with mini white chocolate chips, and some with raisins
  • Bake at 350 for 20-25 minutes till muffins are golden brown
  • Let cool completely as they are very moist
