Apple Oatmeal Protein Muffins
Flourless apple oatmeal protein muffins are soft, tender, and made with no oil or butter. They are sweet, bursting with apple flavor, and crunchy walnuts on top for a healthy breakfast or snack.
These gluten-free and dairy-free apple muffins are made in a blender. They are lower in sugar and high in protein. When I want an apple muffin I don’t want a muffin made with only applesauce, I am looking for the sweet juicy chunks of apples baked into muffins and these deliver! Apple oatmeal protein muffins are filled with plenty of apples, cinnamon spice, and are a satisfying high-protein muffin.

- Different protein powders absorb liquid differently if the batter is too thick add 1-2 tbsp of milk
- These muffins are a grab-n-go breakfast or snack
- Once muffins have cooled store them in an air-tight container in the fridge for 3-5 days or in the freezer.
- If you live at high altitude cook bake at 375 and add a tablespoon or two of milk if batter is too thick

Ingredients
- 1 cup oats
- 1/4 cup collagen peptides
- 1/4 cup vanilla protein
- 2 tbsp ground flaxseed
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 cup almond butter
- 1/2 cup unsweetened applesauce
- 3 tbsp honey
- 1 egg
- 1/2 tsp vanilla extract
- 1 apple finely diced
- chopped walnuts for topping
Instructions
- Finely dice apple
- Add dry ingedients to the blender (oats, flaxseed, vanilla protein, collagen peptides, cinnamon, baking soda, salt)
- Blend to a fine flour
- Add wet ingredients to the blender (applesauce, honey, egg, and vanilla extract)
- Blend to combine
- Stir in diced apple by hand
- Add muffin batter to 9 greased muffin tins
- Top with chopped walnuts
- Bake muffins at 350 for 20-22 minutes
